Simple Strawberry Syrup

This is not a pancake post.
 I just had to make pancakes in order to show you this lovely strawberry syrup.
 Yum...and this sauce is so easy.  I used frozen strawberries for this, but you could use fresh if you have them on hand and you need a quick use for them before they go bad.  I use this sauce for everything. You can top any kind of breakfast item with it, pour over fruit or ice cream, mix into yogurt or milk for delicious and nostalgic strawberry milk, the possibilities are endless.


Simple Strawberry Syrup:
1 heaping cup strawberries (fresh or frozen), sliced
1/2 cup water
1/4 cup sugar
1 tsp vanilla
In a small saucepan, boil the strawberries, water and sugar for about 10 minutes or until the mixture thickens slightly.  Remove from the heat and stir in the vanilla.  Strain the mixture through a fine mesh sieve. Use syrup right away or put it in the fridge and keep it up to 3 days in an airtight container.


You can save the strawberries that you strained out for something if you want, but they might be too mushy and not worth keeping. It's really up to your personal taste.
